Cabbage-Leek Stew

Was trying to make soup and this happened. 


The end product? A hearty stew with brown rice, cabbage, limas, leek, carrot, celery, onion, fennel, and white beans. 

Pretty tasty I must say! 

Ingredients: 
3 carrots; peeled and chopped
2 celery stalks; chopped
1 onion; diced
1/4 fennel; finely chopped
1/2 cabbage; chopped
1 leek; chopped 
1 carton vegetable stock 
1/2 c. Water
1 c. Brown rice
1 14 oz. can of cannelloni beans 
1 c. Lima beans (mine were already cooked)
1 tbsp. minced garlic 
1 tsp. crushed red pepper
1 tbsp. vegan butter
Salt and pepper 

Directions:
Sautée garlic, onion, celery, and carrots  in vegan butter for 5-7 minutes until soft. 



Add other vegetables (except cabbage) and cook for 5-7 more minutes. 


Add stock and seasonings and cabbage. Bring to boil. 


Add rice and beans and simmer for 45 minutes. 

Once done, voila!
