I feel the spicier the better....
While trying to cut back on gluten ingredients (will explain more later) I opted for lettuce instead of tortillas.
Ingredients I used...
1 14 oz. can of black beans
1 block of extra firm tofu
1 red bell pepper
1 yellow onion
2 tbsp. low sodium soy sauce
2-3 tsp. chipotle seasoning
1-2 tsp. garlic powder
Salt and pepper to taste
1 c. corn
2 tbsp. extra virgin olive oil
Large Romaine lettuce leaves
Directions:
Drain tofu and break up into small pieces.
Add soy sauce and seasonings.
Cook in small pan with olive oil for 5-6 minutes stirring around. Add red bell pepper and onion and black beans cooking a few more minutes.
Pour mixture in sprayed glass pan and bake for 25 minutes in oven at 400 degrees stirring around every so often.
While mixture is baking sautée corn in olive oil and extra chipotle seasoning, salt and pepper for a few minutes.
Serve mixture in lettuce cups with avocado and salsa.
